One of the best parts of the covid-19 lockdown for Chef Sebastian Carosi was being asked to contribute to the upcoming Fantastic Fungi Community Cookbook, by none other than the famed cookbook author Eugenia Bone.
Enjoying every opportunity to do the “back and forth” over recipe testing from her apartment in New York all the way to our apartment here in Portland, Oregon. Testing, tasting, manipulating, and finalizing while Carla snapped the pictures and typed the recipes behind the scene. With so many great submissions coming in from across the world it was a credit to Chef’s skill that he had the opportunity to contribute so much.
With a broad knowledge and years of experience in foraging mushrooms across the United States his recipes offer mushrooms in a variety of forms from corn smut to cordyceps, morels to his favorite chanterelles. Ultimately, he was able to contribute five recipes, each with a little piece of all the beautiful places he foraged and prepared that food, right to your kitchen.
